Food Liftover

Noi generazione moderna, spesso diamo per scontato tutto. Viviamo nel benessere, non rendendoci conto che un tempo lo spreco era impensabile, mentre oggi non ci preoccupiamo più di tanto se, ad esempio, buttiamo via una camicia che abbiamo indossato una sola volta, o se, alla maniera giapponese, buttiamo via bastoncini di bambù, avanzi di cibo, o roba che rimane in frigo per settimane perché non abbiamo avuto tempo a casa di cucinare….

Non voglio certo fare la morale, pero' a pensare a quanti sprechi vedo mi viene un po' di tristezza….e se penso che molti altri, meno fortunati di me, non hanno neanche la certezza di un pasto giornaliero…  

Ma comunque, visto che ormai la passione culinaria impazza, ecco che mi diletto anche alla riscoperta dei sapori antichi, con un occhio alla spesa e all'ambiente. Robe che la nonna sarebbe fierissima di me!

Se avete del pane vecchio di qualche giorno, ad esempio, non buttatelo via come facevate fino a ieri, perché oggi potete riutilizzarlo in svariati modi, come ho ben pensato di fare io. 

Sicuramente avrete anche voi preparato gli asparagi con pancetta e formaggio, e avrete sicuramente tagliato via le parti più dure degli asparagi non sapendo bene che farne. Una zuppa di verdure, aggiungendo altri ingredienti ai vostri asparagi, potrebbe fare da accompagnamento ai crostini di pane raffermo che, inzuppati nel brodo, e conditi con un filo d'olio fanno gola a chiunque…

Ma se non siete appassionati di verdure potete sempre riutilizzare il vostro pane vecchio per preparare una torta dolce di pane, spolverata di zucchero a velo. Certo, va mangiata mentre ancora tiepida, perché dopo un giorno o due non e' più' buona.

Improvvisamente mi ricordo di un piatto che mangiavo da piccola, un piatto povero ma molto gustoso..il pancotto. Cuocere il pane avanzato con una salsa di pomodoro, spolverare di parmigiano e condire con olio a crudo, che ve ne pare? Una vera prelibatezza, provare per credere….e poi potete sempre usare quel sugo di pomodoro che e' avanzato per quella pasta di ieri, no?

We modern generation, often give everything for granted. We live in comfort and don't realize that, once, waste was unthinkable, while today we don't care if, for instance, we throw away a shirt we've worn only once, or, like the Japanese way, we dispose of chopsticks, food leftover, stuff left in the fridge to rot because we weren't at home or because we can't bother to cook….

I don't want to preach here, but if I think of how much waste I see I become sad…and if I think that many others, less lucky than I am, don't even have the certainty of a daily meal….

Anyhow, as the cooking passion is getting around, here I am discovering old recipes, with an eye on the shopping bill and on the environment. Even grandma would be super proud!

If you have a couple of days old bread, for example, don't throw it away as you did until yesterday, because today you can re use it in various way, like I did.

For sure you have also cooked the asparagus with bacon and chess, and for sure you have cut the harder bottoms, wondering what to do with them. A vegetable soup, adding something more to your asparagus, could be a perfect accompaniment for your old bread, dipped in the soup with the dressing of a bit of olive oil, everyone loves it…

But if veggies are not your thing, you can always reuse your old bread to bake a sweet bread cake. Though, this one must be eaten while still warm, as it looses its taste once cooled.

Suddenly I also remembered of a dish I used to eat when I was little, a poor but tasty meal…pancotto (cooked bread, literally). How about cooking old bread with tomato sauce, topped with parmesan cheese and olive oil…it is very delicious. And you could always use that tomato sauce leftover from yesterday's pasta, could you?
